Paleo Mango Chicken Skewers



These flavor-filled, Paleo-friendly mango chicken skewers are ideal for a quick weeknight dinner or a summertime BBQ. The marinade adds complexity of flavor, and the sweetness of the mango balances the savory chicken. It's a tasty dish that's easy to make but still looks impressive!

Ingredients:

  • 1 lb chicken breast, cut into chunks
  • 2 ripe mangoes, peeled and cubed
  • 2 tablespoons coconut aminos
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions:

In a bowl, mix coconut aminos, olive oil, lime juice, ginger, garlic, salt, and pepper

Add chicken chunks to the marinade and let it marinate for at least 30 minutes

Preheat grill to medium-high heat

Thread marinated chicken and mango cubes alternately onto skewers

Grill skewers for 8-10 minutes, turning occasionally, until chicken is cooked through and mangoes are slightly caramelized

Serve hot and enjoy!
