This vegan nettle soup is nutritious and delicious, perfect for a cozy meal. Nettle leaves add a unique earthy flavor while coconut milk adds creaminess.
Ingredients:
- 4 cups fresh nettle leaves, washed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 4 cups vegetable broth
- 1 cup potatoes, peeled and diced
- 1 cup coconut milk
- Salt and pepper to taste
- Lemon wedges for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add chopped onion and minced garlic, saut until translucent
Add nettle leaves and cook until wilted, about 5 minutes
Pour in vegetable broth and add diced potatoes
Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes
Using an immersion blender, blend the soup until smooth
Stir in coconut milk and season with salt and pepper to taste
