Poached Haddock in Thai Red Curry Sauce



This Thai-inspired dish features tender poached haddock fillets bathed in a creamy coconut milk-based Thai red curry sauce. The combination of aromatic spices, tangy lime juice, and fresh herbs creates a flavorful and comforting seafood dish.

Ingredients:

  • 4 haddock fillets
  • 1 can 14 oz coconut milk
  • 2 tablespoons Thai red curry paste
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • Juice of 1 lime
  • Fresh cilantro, for garnish
  • Cooked jasmine rice, for serving

Instructions:

In a large skillet, heat coconut milk over medium heat

Add Thai red curry paste and stir until combined

Add sliced bell pepper, onion, garlic, and ginger

Cook until vegetables are softened

Stir in fish sauce, brown sugar, and lime juice

Gently add haddock fillets to the skillet, ensuring they are submerged in the sauce

Simmer for 8-10 minutes, or until fish is cooked through and flakes easily with a fork

Serve over cooked jasmine rice, garnished with fresh cilantro
