Vegan Lemon Almond Cookies



There is a lot of citrus flavor in these vegan lemon almond cookies, and the almonds give them a great crunch. They're great as a sweet treat or a snack in the afternoon.

Ingredients:

  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 1/2 teaspoon baking soda
  • Pinch of salt

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a large bowl, combine almond flour, coconut flour, baking soda, and salt

Add maple syrup, melted coconut oil, lemon zest, and lemon juice to the dry ingredients

Mix until well combined

Using a cookie scoop or spoon, form the dough into balls and place them on the prepared baking sheet

Flatten each ball with the palm of your hand

Bake for 10-12 minutes, or until the edges are golden brown

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely
